Ham Making Tips How To Make Ham

Of the many available preserved meats, Ham is one of the easiest to make.  Ham has become one of the favorite dinner meats no doubt partly because of how easy it is to cook, serve and keep stored for future cooking opportunities.   Done correctly, making your own ham can save you money, whilst also providing you the opportunity to create your own unique and delicious flavor.
There are many different ways to make ham but here is a simple tried and tested method you can start using to produce ham at home right away.  In a nutshell, you make Ham by soaking a portion of pork, typically the upper portion of the hind legs, in salt brine solution for a length of time which is usually a function of its weight depending and then either cooking and/or smoking it. 

Some people prefer to use the loin or parts of it to make ham.Simple though the process is, it can be ready to eat very quickly or can undergo 'curing' that lasts for months. (Curing is the process that gives ham its pleasing pink color while also protecting from botulism and other disease causing organisms.)

Here's a useful ham making tip worth noting...

Don't freeze the meat you plan to use to make the ham because freezing modifies the cell structure such that the salt brine is not able to be absorbed properly.  The meat you plan to use to make the ham must be able to absorb salt, spices and undergo the curing process. 

A dry rubbing method can be used as well but most people find using liquid brine a far simpler process.

Here's a handy brine recipe:

Brine Recipe
4 litres of Water

1 cup of Pickling Salt

1/4 cup of Sugar

1/3 cup of Prague #1 (Cure)

1 teaspoon of Pickling Spice

1/2 teaspoon of Cloves

Cool the brine to about 40F before placing the meat in it and keep it close to that temperature during the brining process.

The meat is then removed from the brine, rinsed and then placed in water at 170F. Hold the meat there until its internal temperature gets to about 155F, this usually takes about an hour for a fair sized piece of meat.

Cool the ham in cold water for about 30 minutes after cooking and then put in the fridge overnight.

For added flavor you can go on to smoke the ham for anything from 5 to 24 hours.

Remember to store your ham in the fridge after you're done.

Regional Cuisine: As American As Apple Pie

We love baseball, hot dogs, apple pie and Chevrolet – or so an old ad for Chevrolet tells us. Apple pie is as American as… well.. apple pie. If baseball is the All-American sport, then apple pie is the all-American dessert. And while the internet and book stores have spread the recipes far and wide, there are classic apple desserts in every region that are characteristic of the cuisine for that area. Wherever Johnny Appleseed spread orchards, there are recipes that make use of other regional ingredients and traditions to create unique desserts with apples and – whatever!

If you think of apple pie as having two crusts and a filling of apples combined with sugar, brown sugar, cinnamon and nutmeg, some of the regional variations may surprise you. Apple cobbler, apple pandowdy, apple puff, apple crisp, apple brown betty are all variations of apple pie in different regions. The prevailing apple recipes for any region may be affected by the variety of apple that’s hardiest and most popular in that area, as well as the style of cuisine that’s prevalent.

In New England, for instance, most apple recipes call for Pippins, Granny Smith’s or other firm fleshed, sweet varieties of apple that cook up well and lose little moisture when being baked. In Maine, it’s not uncommon to find blueberries in your apple pie. In Massachusetts, cranberry apple pie is a favorite. In Vermont, the apples may be sweetened with honey or maple syrup. And in many restaurants on Cape Cod, rather than vanilla ice cream, your piping hot slice of heaven will be served topped with a slice of melting cheese.

In the Southern states, with their predilection for creamy, lightly spiced foods, the most common apple pie recipes include Apple Cream Pie (made with sour cream) and Apple Bourbon Pie, with raisins soaked in bourbon. Raisins soaked in rum are another popular addition to ‘apple pie’ in the South, especially in New Orleans. Other additions include rhubarb, diced peaches and walnuts.

Midwestern Apple Pie is the classic apple pie – two flaky crusts packed with thick, sweet, juicy apple slices mounded high and vented to let the fragrant steam escape. In Kansas or Missouri, your apple pie will satisfy any purist – served with a scoop of vanilla ice cream that melts into the syrupy filling and adds the perfect touch of creaminess to the mix.

In the South and Southwest you’ll find deep-fried apple pie, a variation that matches melt-in-your-mouth flaky fried crust with sweet, diced apples in a syrupy sauce. And in Pennsylvania, the home of the Pennsylvania Dutch, Apple Crumb Pie and Apple Pandowdy take the place of Apple Pie a la Mode on most restaurant menus.

Importance Of Cash Control


Cash is a vital component of any profit-generating organization. An organization's assets generate revenue, which in turn generates cash inflows. These cash inflows are used for several purposes: to pay creditors, compensate employees, reward shareholders, provide asset replacement, and provide for growth.

Cash is unique because it's the single asset that is readily convertible into any other type of asset. Therefore, it's also the most widely desired asset. However, cash is also the asset that is most susceptible to fraud and abuse. Therefore, management has to ensure that adequate controls and safeguards are in place to eliminate any unauthorized transactions with cash.
Fortunately, there are ways management can safeguard the cash generated by its organization. Each of the following methods will help an organization prevent losses due to human error or theft:

• Monthly bank reconciliation
• Segregation of duties over cash handling
• Accountability for cash shortages
• Authorized cash disbursement
• Internal audits

Monthly Bank Reconciliation. Monthly bank reconciliation will help ensure that the amount of cash generated by an organization is consistent with bank records. In addition, an independent review of the reconciliation by management will provide an additional safeguard. Independent verification of bank reconciliation acts as a check to make sure the reconciliation was done properly and ensures there is no abuse of the organization's cash.

Segregation of Duties Over Cash Handling. Every organization must make sure that there is adequate segregation of duties over cash handling. Separating the duties of cash receipts and disbursements prevents an individual from committing and concealing embezzlement.

Accountability for Cash Shortages. Management should hold supervisors accountable for cash shortages. If supervisors know that they'll be held accountable for a cash shortage, they'll be motivated to keep a close eye on how cash is used within their departments.

Authorized Cash Disbursement. Management should allow cash to be disbursed only through checks issued by authorized signers, which will provide a method for tracking cash usage. In addition, your organization should require signatures on all checks in order for them to be valid.

Internal Audits. Every organization should arrange to have internal audits conducted on a regular basis. Whether the auditors come from an internal audit staff or an outside auditing firm, auditing an organization's accounting system can identify how effective and accurate the operation is and whether or not any improvements need to be made.

ESTABLISHING A QUICKBOOKS CONTROL ENVIRONMENT

QuickBooks allows more than one user to access company files. (Conceptually, an unlimited number of users may have access to the company's data files, but only five users may work with the data at the same time.) When multiple users will have access to the company's QuickBooks data files, it generally is necessary to create a control environment that protects the data from unauthorized use. For example, some users may not need access to sensitive payroll data, while others may not need access to accounts receivable and sales information.

One of the best ways to prevent errors when posting transactions in QuickBooks is to limit access to specified users. If passwords and access permissions are not assigned, users have unlimited access to all areas in QuickBooks. When setting up QuickBooks, one user should be designated as the QuickBooks Administrator.

The QuickBooks Administrator has unlimited access to all areas of QuickBooks and assigns passwords and access permissions to other users. The name and password for the QuickBooks Administrator can be set up by selecting "Set Up Users" from the "Company" menu. The QuickBooks Administrator must be set up before any other users can be set up. Although QuickBooks does not require the use of passwords, the QuickBooks Administrator should set up and use a password since anyone logging in to the company's QuickBooks files as the administrator has full access to all areas in QuickBooks. After setting up a name and password, the QuickBooks Administrator should click the "Closing Date" button in the "User List" window and enter the date through which books are closed in the "Accounting" preferences dialog box. The administrator can also password-protect the closing date (requires single-user mode). When this feature is enabled, QuickBooks requires users to enter the password before they can make changes to periods that have been closed.

The QuickBooks Administrator is the only user who can:
• Set up other users.
• Change other users' access permissions.
• Set up a company file using the "EasyStep Interview."
• Change company information (such as company name, address, fiscal year, tax year, tax form, and federal identification number).
• Change company preferences.
• Condense data.
• Import and export data.
• Apply for QuickBooks Merchant Account Services.

Note: Since the QuickBooks Administrator has the ability to password-protect the entire company's files, has access to all accounting functions, and assigns access to all other users, the company should carefully consider whom to select as administrator. The person selected should have an understanding of the importance of this position on the internal control of the company. Some companies designate the controller or Chief Financial Officer as the QuickBooks Administrator because those individuals normally do not have direct interaction with the software.

The QuickBooks Administrator can set up additional users and specify the areas to which each person has access. To do so, select "Company" from the menu bar and "Set Up Users." Then click the "Add User" button in the "User List" window. Assign a user name and password for the new user. Even though QuickBooks does not require the use of passwords, each user should be set up with a password that must be used when logging in to the company's QuickBooks file. (An unlimited number of users can be added, but only five can have access to the company's data file at the same time.)

After setting up the user name and password, the administrator then specifies whether the user will have access to selected areas of QuickBooks or all areas of QuickBooks. The user should not be given access to all areas of QuickBooks since that permission essentially establishes a second administrator allowing users to access the following:
• Sales and accounts receivable.
• Purchases and accounts payable.
• Checking and credit cards.
• Inventory.
• Time tracking.
• Payroll and employees.
• Sensitive accounting activities such as bank transfers, general journal entries, and online banking.
• Sensitive financial reports.
• Changing or deleting transactions.
• Changing closed transactions.

Note: Even if users need access to most of the preceding areas, they should not be allowed to change closed transactions.

Rather than giving users access to all areas of QuickBooks, the QuickBooks Administrator should give users access to selected areas. In that case, the QuickBooks Administrator specifies whether the user should be given no access, full access, or selective access to each individual area listed in the preceding paragraph. If the user is given selective access in a particular area, the QuickBooks Administrator also must specify whether the user can (a) create transactions only, (b) create and print transactions and forms, or (c) create transactions and create reports.

Sensitive Accounting Activities. Users generally should not be given access to sensitive accounting activities. Such activities include:
• Maintaining the chart of accounts.
• Working in the account register for balance sheet accounts.
• Reconciling accounts.
• Making journal entries.
• Using the "Accountant's Review."
• Transferring funds between accounts.
• Using online banking.
• Creating budgets.
• Printing registers.
• Condensing data.

Even if users are given full or selective access to sensitive accounting activities, they cannot create financial reports (with the exception of the "Payroll Report") or change or delete previously recorded transactions. Those permissions must be assigned separately, as discussed in the following paragraphs. The QuickBooks Administrator generally should be the only user with access to sensitive accounting activities.

Sensitive Financial Reports. Users generally should not be given access to sensitive financial reports (such as the balance sheet, profit and loss reports, budget reports, cash flow reports, income tax reports, and audit trail reports). That access allows users to create all reports and graphs available in QuickBooks. However, even users with access to reports cannot change or delete transactions included in the reports. That permission must be assigned separately, as discussed in the following paragraph. The QuickBooks Administrator generally should be the only user with access to sensitive financial reports.

Changing and Deleting Transactions. Even if QuickBooks users have full access in a particular area, they cannot change or delete transactions in that area unless they are given that permission in the "Changing or Deleting Transactions" window. For example, a user with full access in the sales and accounts receivable area cannot change invoices or sales receipts unless they are given permission to change or delete transactions. However, even if users do not have permission to change or delete transactions, they can change or delete transactions they entered in the current QuickBooks session so that quickly identified data entry errors can be corrected. Users that are given permission to change or delete transactions can alter transactions only in areas in which they have access. For example, users that have access to the inventory area but not to the payroll area cannot alter payroll transactions even if they have permission to change or delete transactions. The QuickBooks Administrator generally should be the only user with permission to change or delete historical transactions.

If a user is given permission to change or delete transactions in areas in which they have access, the "Changing or Deleting Transactions" window also asks whether the user should be able to change or delete transactions recorded before the closing date. The QuickBooks Administrator always should deny users access to such transactions by selecting "No" in response to that question. Even when "No" is selected, users can view prior-period transactions in QuickBooks areas to which they have access. If "Yes" is selected and the administrator sets a password, the user will be required to enter the password.

Viewing Data. QuickBooks allows the QuickBooks Administrator to limit a user's access to creating sensitive financial reports or creating and printing sensitive reports. Companies can use this feature to allow the Controller, Chief Financial Officer, or another person independent of the accounting function the ability to oversee the accounting operations. Because many companies frequently have small accounting staffs, this increased oversight can mitigate some of the risk to the system of internal control created by having limited segregation of duties.

The game of golf has a Holy Grail, a mythical thing that everyone is searching for but nobody ever seems to find: the perfect golf swing. The reason for this is simply that there is no such thing as a perfect golf swing. Each person is different, and so the swing style that is right for them will vary somewhat. However, there are a few basics that when applied can dramatically improve your golf swing.

There is no doubt that a professional golf swing is at the heart of the game and it is not possible to expect to play a reasonably good game of golf if one is not able to produce a consistent and good professional golf swing. The Swing Plane

What's For Lunch?

As an entrepreneur, I'm always intrigued by small businesses, home-based or not, that exceed the expectations of their customers in a big way.

Let me tell you about one of them.

Recently I spent some time with my daughter in her college town of Tuscaloosa, Alabama. We were spending the day getting her apartment ready for her return to school in the fall. When it was time for lunch, she wanted to take me to a restaurant in the small town of Northport, just to the north of Tuscaloosa.

Northport is one of those typical southern small towns whose downtown area has been converted into a delightfully quaint shopping area. Central to it is a restaurant called City cafe.

What an experience.

We arrived at the location at 11:30 a.m. Typically I like going to restaurants for lunch at that time so that one can "beat the rush." I commented on this to my daughter before we arrived; she just laughed.

When we walked in, I understood why. I faced a room with

  1. a lunch counter to the left (full)
  2. booths to the right (full) and
  3. a line that stretched all the way to the back wall and then circled around.

Like visitors to Disney World, we automatically took our place at the end of the line. Then I began to look toward the front of the line and realized that it continued on into another room (which I couldn't see). So I asked my daughter, "where is the FRONT of this line?"

Her response - "you'll see."

Sheesh!

So I began to look around at the diners surrounding me. Their plates were piled high with what can only be described as "down home Southern cooking." And the diners themselves? A quick glance around the room told me that this establishment attracted customers from every walk of life. At this moment, however, they all had one thing in common - the serious business of eating.

Meanwhile, the aroma was making my mouth water. So I turned my attention back to the ultimate end of the line. When would I have my turn?

About 15 minutes later we made our way to the next room. It was there I discovered that the front of the line ended at the doorway between this room and yet ANOTHER room. Both of these rooms had two rows of booths on either side. I didn't count them, but my estimate is about six on each side of the room, making about 24 booths in total. They could sit as many as four to a booth.

I looked around for a hostess; there was none. Then I began to understand the system; you waited in line with your party, and when someone got up from one of these booths, you just went and sat down. Period.

The waitress appeared at our table almost instantaneously, cleared off the previous diners' plates, wiped the table, and took our drink orders. Actually, what she said was, "Tea?" And you're an idiot if you order anything else. It's important to note here that if you order tea anywhere in the Deep South, it is understood that it comes iced and sweetened. If you want it any other way, you'd better tell them that.

Time to check out the menu. It was at this time I realized that City cafe operates five days a week only - Monday through Friday. The lunch menu consisted of your choice of entree and/or vegetables which you chose from the list for that particular day of the week. The price of the meal was determined by the number of vegetables and entrees you chose.

This was Tuesday; my choices included fried green tomatoes. Who was I to pass this up? Beef tips with rice and steamed squash rounded out my meal, but I could just as easily have chosen from a dozen other tempting selections. It was tough to pass up the fried okra and steamed cabbage (my daughter chose the cabbage along with chicken-fried steak), but I was pleased with my meal. dinner rolls and cornbread were, of course, provided as well.

And the tea? Try drinking it to the bottom of the glass - won't happen at City Cafe. It's another person's job to make sure of that.

The price for both our meals? I spent $10.75 - but $3.00 of that was a tip. No kidding. She and I had dined at a well-known restaurant chain the night before and the tip for that meal was the same as the price of the City Cafe meal itself.

Guess which one I enjoyed the most?

How Much Should You Be Spending On Clothes?


It's a question that I receive from time-to-time from people trying to get a handle on their clothing expenses. Whether you have a lot to spend or a whole lot less than you'd like, there are a couple of ways to go about figuring how much of your budget you should be allocating to clothes.

1. The Historical Method

If you typically keep track of all of your expenses by hand or by computer, you can usually find this number with very little effort. Simply tally the amount you've spent by year for the last few years and see how they compare to each other.

If your spending habits are pretty predictable, the amounts will probably be similar for each year. If you've had a job change that impacted your wardrobe requirements (got a promotion, went to uniforms, left Wall Street to start a goat farm in Vermont)-or had a teenager enter or exit your midst-you'll no doubt see the impact in your clothing expense history.

Simply determine how long the impact will be felt (from here on out, for three more years, etc.) and adjust the rest of your budget accordingly. If the number seems high or low in proportion to the rest of your income and expenses, you may need to adjust your spending habits to meet your business and image goals.

2. The Percentage Method

For those of you who don't typically keep records or who want a more definitive answer, you may want to look at the percentage method.

The percentage method is where you allocate a certain percentage of your income to specific expenses.

Because these can vary wildly depending on your marital and dependent status, work environment, local cost of living, etc., use these AS GUIDELINES for forming your budget, then adjust as necessary for your particular situation:

Housing: 20-35% Taxes: 15-35% food: 15-35% Clothing: 3-10% Transportation: 6-20% Entertainment: 2-6% Savings: 5-9% Miscellaneous: varies

Now before you use this as a permission slip of sorts to head to your favorite store to spend 10% of this year's salary on clothes, there are a couple of things you need to keep in mind:

1. Your Lifestyle

If you wear a uniform to work, work at home or in a casual environment, are retired or are getting ready to retire, you can probably get by on a 3-5% clothing budget (or less).

If you are regularly photographed, are a public official, speak, consult, or charge a lot of money for your products or services, you will need to spend more on your wardrobe, typically 7-10%.

2. The Needs of Each Dependent

If you are married and raising children, you'll need to spread the budget between everyone in the household. So as the number of bodies to clothe goes up, the amount to spend per body goes down.

Now while your teenager (or pre-teen) will no doubt argue that she should be allocated the bulk of the budget to buy the status symbols of her peer group, don't do it; the distribution should be based on each person's lifestyle requirements. Look at the wage earners' needs first, then work your way through each person in the family.

So if Dad does computer programming for a hospital, for example, Mom sells diamonds to socialites, Junior is heavily involved in sports, and little Susie is the scholarly type who prefers books to friends, then the allocation might goes as follows:

*Mom should spend the most (sells a high dollar product) *Then Junior (school clothes, sports gear and uniforms) *Then Dad (casual, low-profile work environment) *Then Susie (school clothes, a few casual clothes)

Make sense? Determine the needs per person, then allocate accordingly.

Whatever you do, don't scrimp on your own wardrobe to dress your kids "to the nines." While this is common practice in a lot of families, it's counterproductive: the most money goes for the clothes that are worn the least and that have fleeting impact, while the least amount goes for the clothes that are worn the longest and need to have the greatest impact.

So knowing that the more polished you are, the more money you make and the less polished you are, the less money you make, don't sacrifice your own image goals to buy expensive clothes for your kids that they'll outgrow in six months. Instead, put your own needs as the wage earner first, increase your income, and you'll have more money to spend on clothes for everyone. Make sense?

3. Your Existing Debt Load

Now this whole spending plan assumes that you operate your household on a cash basis, meaning NO DEBT. If you're carrying a lot of debt-or even a little-beyond your mortgage or car note, then you need to reduce your expenses to bare-bones minimum until you've satisfied your creditors first.

So if you're still paying off last year's fall wardrobe or that spending spree you went on after you broke up with Mr. Wrong, don't add to your strapped finances by assuming that these spending percentages are etched in stone. They're not. Spend low while you pound away at the debt, then re-adjust as necessary once you're back in the black.

So what's the bottom line?

If you commit yourself to staying within your budget, you'll spend less, make wiser clothing purchases, teach your kids how to handle money appropriately, AND be able to sufficiently fund your retirement to dress well for years to come.

So how much money should you be spending on clothes?

Enough to help you look good, feel good, boost your income, and meet your financial goals. No more, no less.

2.Elegant coffee drink recipes need not be fussy to succeed! Make a pot of your favorite brew, a bit stronger than usual. Add un-whipped whipping cream, right from the carton. Rich, elegant and easy. Yes, there are a few extra calories involved, but it's oh, such a treat.

As with many of the hot after dinner coffee drink recipes, this one is great on a chilly evening.

5.Iced coffee drink recipes require a few minutes of advance preparation for the perfect cup. Make an extra strong pot of coffee and allow to cool. Freeze the coffee in ice trays. When frozen, you can bag it up in a freezer bag for instant access at serving time. A few hours before you plan to serve, make a pot of regular strength coffee. Allow to cool and refrigerate in a plastic container with a pouring spout. Fill a tall glass with the coffee cubes, pour the cold coffee over and garnish with whipped cream. Drizzle caramel sauce over the whipped cream.
